When you think of truffles, your thoughts may immediately go to a delicious array of beautiful chocolates. As enticing as that may be, we are bringing up a different truffle – the mushroom! A truffle is a type off mushroom and there are actually hundreds of different kinds. For what is basically considered a fungus, truffles are in reality a fancy delicacy and some types are considered to be the most expensive food in the world. Black truffles from France are known as black diamonds and even just a few shavings from the mushroom can cost hundreds of dollars. Many people actually use dogs trained to sniff out this delicacy.
In honor of this wonderful food, Deerholme Farm in Duncan, BC is offering a one-of-a-kind cooking class where the truffle takes center stage. Taking place on Saturday, December 6th, 2014, the Truffle Class will teach about the different types of truffles, seasons they grow, and allow you to learn several recipes and cooking techniques using truffles as the main ingredient. Alfredo pasta with truffles and cheese and terrine of truffles and turkey with sage and cranberry are just two of the delicious dishes you will learn—just in time for the holidays! Instructor Bill Jones is an accomplished chef who has written 12 cookbooks. This class is suitable for all skill levels—just a willing spirit and a desire to learn something new are all you need.
